Mitch Stamm, retired Executive Director of the Bread Bakers Guild of America, was an Associate Instructor at the International Baking & Pastry Institute at Johnson & Wales University for 17 years. He is the author of “The Pastry Chef’s Apprentice” and has published over 35 magazine articles. He coached and managed Baking Team USA and has extensive judging experience at national and global baking competitions, most recently serving as the Jury President at the Mondial du Pain. He continues to connect people to the art, craft, and science of baking and to each other.
