Jeffrey Hamelman

Jeffrey Hamelman is the author of BREAD: A Baker's Book of Techniques and Recipes and a recipient of the Bread Baker's Guild Golden Baguette Award. He's one of a limited number of Certified Master Bakers in the United States and a past captain of Baking Team USA. He was an employee owner at the King Arthur Baking Company for 17 years, opening and directing the King Arthur Flour Bakery, and developing and teaching the professional classes for the Baking School. He now shares his knowledge and decades-long commitment to baking by teaching students around the world, and loves the opportunities this affords him to learn from others.

 

“During my first visit to the Oruchinga Refugee Settlement, we were able to open a bakery. We were able to teach valuable baking skills—possibly lifelong skills—to refugees from the Burundi, Rwandan, and Congolese communities. We watched these new bakers, from three nationalities, work together as a unified team. We saw the immense joy on their faces as they used their new baking skills to make fragrant bread, to feed themselves and their families, and to offer free bread to those less fortunate.

We made numerous forays deep into the refugee settlement to distribute bread to the most vulnerable people—the children. We handed out thousands of little buns to thousands of euphoric children. Children know only the present tense. My hope is that, by receiving the buns, even though they represented just a brief cessation to the anguish of their bellies, it instilled in them the possibility of hope in this life.”
